Portfolio development, installation of a marketing plan and comply with requisite development directions in terms of room turnover and profit margins. Definition of the annual provisional budget in balance with the income, the expenses, the margins and the maintenance. Developing the selling price of the rooms according to the season and the demand (yield management). Setting up of a customer satisfaction listing.

Restaurant Management: Manager and then owner of restaurants with seating for 70 to 110 persons. Traditional French and mi-gourmet cuisine. General management including stock control and supervision each day of lunch & dinner services. Taking of orders from the clients and waiter service.
